If you like creamy sauces but don’t want all the guilt then this recipe is for you. I use this sauce when I make lasagne or maybe a chicken a la king. I once made a chicken alfredo with whole wheat pasta (not low carb but still healthy). It’s way cheaper than having to buy tubs and tubs of cream or cream cheese. When banting on a budget then this is ideal.

Half a head of cauliflower
Half a small chopped onion
1 teaspoon of crushed garlic
1 teaspoon of butter
Salt and Pepper to taste
Boil your cauliflower till it’s nice and soft then drain.
Heat up some olive oil and fry your onions and garlic till golden brown.
Add your boiled cauliflower, sautéed onions and garlic, butter, salt and pepper to your blender and whizz it all up till smooth. You can add milk to reach your desired consistency.
And enjoy! Super easy I tell you. What’s great about this sauce is that it barely tastes of cauliflower so your kids will enjoy it too. A great way to sneak some veggies into their diets (you can thank me later lol!)
You can store your sauce in the fridge for up to a week, so whenever you need to add a creamy element to your dish then you can use this.
